Enokitake Mushrooms are a long thin elegant white mushroom used in East Asian Cuisine often called needle mushrooms. They are full of thiamin, niacin, potassium, riboflavin, pantothenic acid, calcium, copper, iron, and selenium, whilst being low in sodium and cholesterol.
